Muffins and Quick Breads

Fortunately, muffins are easy to convert to gluten free. I have also reduced most of the sugar in the following recipes. Feel free to adjust the quantity of sugar to your own personal tastes. Also, please note that most of the following recipes list a range for the amount of milk needed. This is because gluten free flours react differently to humidity levels in the air, therefore, you can make the same recipe multiple times and never use the exact same quantity of milk. Also, use whatever type of milk you are able to tolerate/prefer, just avoid any flavored milks.

 

Because I am no longer using xanthan gum as a binder, I have listed the amounts to be used for either guar gum or psyllium. Use whichever binder you prefer.
