Cakes and Cookies

Fortunately cakes and cookies are also easy to make gluten free. As an added bonus, most people can't even tell that these are gluten free. To make it easy to shape the cookies, I often use a tablespoon measuring spoon.

 

To reduce the fat in the cookie recipes, try substituting melted coconut oil for the butter, using half as much (i.e., if the recipe calls for 1/2 cup of firm or softened butter, use 1/4 cup of melted coconut oil).
